Like pumpkin and spice, Fall and soup just seem to go together! Do you agree? The perfect fall dinner at our home is hot soup, bread, and salad! I am trying to skip the bread part, but the guys like it! Today’s recipe is one of our favorites – healthy chicken tortilla soup. This is an adaptation of a recipe I found online many years ago and I’ve changed up a lot of the ingredients to suite our tastes. I’ve had this recipe when we’ve had friends over and it always gets rave reviews!
One of the things that I do to make this recipe easier is using a Rotisserie chicken that I purchase at Costco. A whole rotisserie chicken at Costco is only $5 and it totally eliminates the step of cooking a pound of chicken. I also puree the Ro*Tel and the salsa verde in my food processor, just because my family has a problem with chunky pieces of anything! You can use any corn in this recipe, fresh or frozen, but I prefer John Cope’s Silver Queen White Corn. Growing up on a farm, my mother canned or froze all our vegetables and corn season always meant hours in the kitchen cooking, cutting, and freezing corn for the next year. But, when my mom discovered John Cope’s Silver Queen White Corn, she stopped! If you like Silver Queen corn, then get this corn! It’s seriously the best!!!
I always have small bowls of sour cream, shredded cheese, and tortilla chips for garnish. But, the soup is really delicious without any extras in my opinion! I hope you’ll give this healthy chicken tortilla soup a try! It’s so easy to put together and is just perfect on a cool fall evening! Enjoy!

Doreen! This soup looks and sounds wonderful! Hopefully Texas will cool off soon, and we will find it’s soup weather here, too! We love a huge pot of soup, and the leftovers that seem to taste even better the next time! I would love to know if that brand of frozen corn is found at Costco, too, or whether it’s from another store … ?! Thanks!

I’m a little confused by the ‘2 small cans of Rotel.’ I have never seen anything other than the 10 oz. can. Is that what you’re referring to? Thank you.
